Dried Ginger


Dried ginger is nothing but fresh ginger, which has undergone a drying process. The fresh ginger are soaked in water overnight after which the outer layer is carefully removed by using knife or a peeler. They are washed again and then sun-dried on mats for around a week.

Common Name: Sukha adrakh, Sonth, Dry ginger, Dried ginger


Cultivation and Production: India is the World's largest producer & exporter of dried ginger. In India, Kerala, Orissa, Meghalaya, West Bengal and Arunachal Pradesh are states that cultivate Ginger.

In India it is mainly harvested in December and January.

Usage :

  • Dried ginger is usually powdered and then used in making spices and masala which are used in gravies, curries, marinades, stews etc.
  • Dried ginger is crushed or powdered and then used to brew teas.
  • It is used crushed in India, specifically punabi marinades for Tandoori starters, veg as well as nonveg.
